Grilled Mahi Mahi with Sweet Pepper Relish

2 pounds Mahi Mahi fillet
2 tablespoons Cajun seasoning
1 tablespoon butter
1 tablespoon olive oil
1/2 cup onion, diced
3 peppers (one red, one yellow and one orange), diced
1 tablespoon honey
1 tablespoon dijon mustard
1 clove garlic

Prepare the relish by placing the butter and oil in a pan on medium heat. Add the onions and cook until transparent. Add the peppers and sauté for 2 minutes. Remove from heat and add the honey, mustard and garlic. Cool and refrigerate until ready for use.

Prepare your grill with a medium-hot fire. Season the Mahi Mahi fillet with Cajun spice. Place on the grill for 7 to 8 minutes per side turning only once.
Serve with room temperature sweet pepper relish.
