In a large bowl, using a wire whisk blend pudding mix and evaporated milk, for about 1 minute. Add pumpkin and pumpkin pie spice to bowl, and mix well with a sturdy spoon. Spoon into individual dessert dishes. Refrigerate for at least 10 minutes prior to serving. Top with Cool Whip whipped topping, if desired.
